Evidence is what imposes itself on the mind as a truth, or a reality, without the need for any proof or justification.
This definition is for me what attracted me to the profession of Chef.
From my first day in the kitchen, I knew I wanted to be a restaurant owner. Thanks to my family, my collaborators, work, determination, surpassing oneself, L’Évidence was born and writes a different story every day. My cooking is done instinctively and instantly, in a Carte Blanche spirit. We are going to take a culinary journey together both in Touraine and at times in other regions that are dear to me.
