Black gold in a pod, an exotic treasure.

A treasure from Martinique in our mille-feuille.

Less known than the Bourbon or Tahitensis varieties, Pompona vanilla is a Caribbean rarity, also called “banana vanilla.”
Its plump pods, with a unique fragrance blending coumarin, almond and soft vanilla notes, make it a prized ingredient among chefs and perfumers.
Cultivated with care in Martinique and harvested in limited quantities, it is truly a treasure.

Chef Gaëtan Evrard travelled to a vanilla estate in Martinique to immerse himself in this singular ecosystem, nestled deep in nature.
A timeless moment that you can experience here in our restaurant, where we invite you to share our Évidence.

In our mille-feuille, this exceptional vanilla is elevated in a light cream, balanced by caramelised puff pastry — a dessert where tradition meets refinement.
An homage to vanilla, reimagined with finesse.
